Bumble Nums Inspired Popsicles

With summer in full swing, what better way to cool down and get refreshed than with some super simple popsicles!  These popsicles come together in no time at all, with only a few ingredients. They’re super fun to make and easy for little hands to help out with.

Having two versions is super simple since the ingredients list for both are short: we have strawberry kiwi for on-the-go, and a cookies ‘n cream made with Oreos for a more indulgent option for dessert. The strawberry option is definitely the healthier of the two, using nothing but fresh fruit and coconut water. The oreo version is made with healthy greek yogurt and coconut milk, so you get that extra bit of protein!

We’d suggest making a double (or even triple) batch of these and keeping them in your freezer – they’re a perfect on the go treat. Be sure to eat them quick, or you’ll end up with sticky hands!

Sparkling Strawberry Kiwi Pops

*makes 6 pops

1 ½ cups fresh strawberries, washed and hulled
5 kiwis, scooped from their skins
½ cup coconut water with pulp

Puree the kiwi in the magic bullet with a splash of coconut water. Pour into molds filling only halfway.

Freeze for about 15 minutes until just set. While the kiwi layer is freezing, puree strawberries with remaining coconut water.

Remove kiwi layer from the freezer, and fill the remaining half up with the strawberry mixture. Insert popsicle sticks or lids for molds, and freeze for 8-12 hours.

Cookies n Cream Pops

*makes 6 pops

1 cup plain or vanilla greek yogurt
½ cup coconut milk
4-5 oreos
1 teaspoon vanilla extract

Blend all above ingredients together until just combined. Pour into popsicle molds and freeze 8-12 hours until set.

*optional – melt 3-4 squares white chocolate in the microwave in 30-second increments until smooth. Add to a piping bag or ziplock bag with the tip cut off, and drizzle melted chocolate over the frozen pops. Top with crushed oreo cookies and return to freezer for a few minutes until chocolate is set.

** To remove from molds, run under hot water for 2-3 seconds and gently pull out.
